Peach Hand Pies




We created a recipe for peach hand pies today, and we are really happy with how easy they were to make!  The recipe makes 8 hand pies.  Try them for yourself - we think they tasted great, not too sweet and the crust was buttery, flakey, and delicious!

Butter Pastry

2 1/2 cups flour
1 teaspoon sugar
1 teaspoon salt
2 sticks ice cold butter, cut into small cubes
1/4 cup ice water

Mix flour, sugar, and salt in food processor or bowl.  Process or mix in butter until mixture forms pea sized crumbs.   Add ice water a tablespoon at a time just until dough holds together.  Form into two disc shapes and chill dough wrapped in waxed paper in fridge for at least one hour.

Pie ingredients:

2 large fresh peaches, rinsed
2 Tablespoons sugar
2 Tablespoons flour
1/4 teaspoon cinnamon
1 egg, beaten

Mix sugar, flour and cinnamon in a small bowl.  Beat egg in a separate small bowl.

Assembling hand pies:

Cut each disc into four equal pieces.  Flour countertop and roll each piece into a circle shape.  Slice 1/4 of a peach onto dough and arrange in a fan shape.  Sprinkle flour mixture over peaches.  brush outside edge of dough with one beaten egg to help seal pie edges.  Fold dough over peaches and press around the edges.  Brush top of pie with egg and cut tiny vent holes in top of pie.  Bake on parchment lined baking sheet at 350 degrees for 1/2 hour or until golden brown.  Serve warm or at room temperature.  Refrigerate any leftover pies for future enjoyment.
